Green Muffins – Spinach Oat Muffins

St. Patrick’s Day is the perfect excuse to eat green food. No, I don’t mean break out the food dye. Nature’s greens offer us so much more and a sneaky way to add more to your diet or your children’s is by making these vibrant spinach muffins. Oh, and did I mention these are blender muffins. That’s right throw it all in the blender like this:

I use a Ninja Professional Blender & Nutri Ninja Cups (BL660) that you can purchase on Amazon {affiliate link} or in most home stores. I recommend this over the Oster blender because of size and what it can handle. Our Oster blender smells like smoke after running frozen fruit for smoothies and shakes. It is also too small for blender muffins. The Ninja is up for the challenge of frozen fruit or blender muffins.

Okay back to these St. Patty’s colored muffins. Once you have blended all the ingredients into a green creamy smoothie. (PSST! Don’t sample, raw eggs.) Pore into greased muffin tin or use muffin liners. Place in the oven for 30 mins. All ovens heat a little differently so watch closely the last five minutes. Use a toothpick to test doneness. Place in center of a muffin. If it comes out of the middle clean, you are ready for a Leprechaun-tastic day! Let them cool if you use muffin cups or they will stick.

Spinach Muffins

  • Servings: 1 Dozen
  • Difficulty: easy

A healthy St. Patrick's Day snack or green breakfast on the run.



  • 10oz Fresh Spinach Leaves
  • 2 Ripe Bananas
  • 4 eggs
  • 1/3 c. peanut or almond butter
  • 1 Tsp Cinnamon
  • a pinch of nutmeg
  • 1 tsp Vanilla Extract
  • 1 Tbsp Baking Soda
  • 1 Tbsp Apple cider vinegar
  • 1/2 Cup Oats
  • Opinion: 1/4 cup of raisins or blueberries to stir in after blending


  1. Blend spinach, bananas, eggs, peanut butter, cinnamon, nutmeg, oats and vanilla.
  2. Add baking soda, and vinegar. Blend again
  3. Mix in the raisins or blueberries
  4. Pore batter into greased muffin tin.
  5. Bake 350 in oven for 30-35 mins. Let cool.
